Vegan Protein Pancakes

Okay so these took me a few attempts to get them perfect because they kept sticking to the pan! But here they are, and oh my they were tasty.

These are a great snack for me; quick, easy and taste much less healthy than they are. I’m always looking for new ways to inject additional protein into my diet; any more suggestions are welcome, add them in the comments!

YOU WILL NEED:

1/4 cup hemp protein powder | 1/4 cup oats | 1/2 tsp of baking soda
1/2 teaspoon cinnamon  |  1/4 cup almond milk | 1/4 cup water | 1/2 mashed banana

METHOD:

1  Mix all the ingredients together with a whisk or blender. Both work fine.

2 Heat your hob to medium and add a teaspoon of coconut oil. If the pan is too hot the pancakes will stick.

3  Once it’s hot and the oil has melted add some of your mixture. It should make 4 or 5 pancakes. I did 2 at a time in the pan which worked great.

4  Wait until the middle starts bubbling and use a spatula to see if it’s ready to flip. You’ll be able to tell by nudging the sides gently. If it’s not ready the top will still be runny  and it’ll break a little. Once it’s done flip it, wait for a couple of minutes and you’re done!

 

 

I added a dollop of peanut butter and the leftover banana. NOM.
