My bf’s favourite treat is shortbread cookies. While he eats mostly vegan food with me, he still has the occasional dairy induced meal.
He suffers with migraines though and I think we’ve pinpointed it as dairy’s fault! So he’s started being super strict and cutting out anything with even a tiny bit of added milk in to see if it helps. The only thing he said he’d miss was shortbread cookies which inspired me to try some vegan ones!
There is really not much to these, I only had to pop out for the dairy free chocolate buttons, everything else I already had in the cupboards.
You will need:
200g Pure butter | 100g castor sugar | 300g plain flour | dairy free chocolate buttons/drops
1 Measure out your ingredients and mix the butter and sugar together.
2 Add in flour and stir until dough has formed.
3 Break up the chocolate buttons and mix them into the dough.
4 Wrap thee dough in cling film and place in fridge for approximately 25 minutes.
5 While the dough is firming, grease a baking tray with butter and sprinkle some flour on your work surface. Pre-heat your oven to 160 degrees.
6 Roll out your dough so it’s between .5cm and 1cm thick (depending on your preference).
7 Cut out your cookies with dinosaur cutter! (or whichever cutter takes your fancy).
8 Place them on the baking tray and bake for between 12 and 40 minutes. When they start to turn golden brown, they’re done! Make sure to keep checking.
I like my cookies chunky so I did them quite thick and they took about 40 minutes to cook. If they’re thinner obviously they will take less time so adjust accordingly and keep checking them.
They’re so yummy and much more fun to make when they’re dinosaur shaped. Enjoy!
