When I was transitioning from being a vegetarian, my first question, like many others, was “what can I eat?”
It makes it easier to break it down into meal sections so I thought I’d cover lunchtime! I get that trying to find a vegan lunch is difficult as you’re probably at work/on the go and that makes it way more awkward! So I compiled some easy lunch ideas to give you a nudge in the right direction.
I usually pick one of these:
Pitta Breads | Tortilla Wraps | Jacket Potato
And then add 2 or more of these:
Salad (cucumber, tomatoes, spring onions, lettuce)
Cheatin’ vegan Ham/Turkey/Chicken (Available from Ocado and Holland & Barrett)
Tofu (Smoked or marinated available from Asda or Ocado)
Violife cheese (Available from Asda)
Add a sauce:
Mayola (Available from Tesco/Asda/Ocado)
Hot pepper sauce
Most of the last 3 in the sauce section are vegan, but double check the ingredients to be sure.
You’ve got yourself a mega quick, easy lunch. These work as a packed lunch as well, for those of you who are on the go.
