Avocado Spaghetti


This is my new favourite recipe! It’s tasty, healthy and really filling; what more could you want?

You will need:

2 servings of spaghetti
2 avocados
Smoked tofu (amount if down to personal preference/hunger!)
2 portabello mushrooms
6 spring onions
Sea salt and black pepper
Mixed herbs
Coconut oil


  1. Cook spaghetti
  2. Chop and stir fry spring onions, mushrooms and tofu in coconut oil
  3. Mash up 2 avocados with a pinch of sea salt and black pepper and a sprinkle of mixed herbs
  4. Drain spaghetti and mix in with the avocado mixture until you have a green tangled mess!
  5. Add stir fried mixture on top


It’s actually THAT easy! This is SO good and the avocado and tofu really fill you up!
Use whole grain spaghetti for a healthier dish that’s higher in protein.
