This is my new favourite recipe! It’s tasty, healthy and really filling; what more could you want?
You will need:
2 servings of spaghetti
Smoked tofu (amount if down to personal preference/hunger!)
2 portabello mushrooms
6 spring onions
Sea salt and black pepper
Here’s how to do it:
- Cook spaghetti
- Chop and stir fry spring onions, mushrooms and tofu in coconut oil
- Mash up 2 avocados with a pinch of sea salt and black pepper and a sprinkle of mixed herbs
- Drain spaghetti and mix in with the avocado mixture until you have a green tangled mess!
- Add stir fried mixture on top
It’s actually THAT easy! This is SO good and the avocado and tofu really fill you up!
Use whole grain spaghetti for a healthier dish that’s higher in protein.
