I baked: Chubby Choccy Oat Bites


I gambled a bit with this recipe, adapting a couple I found, but it worked really well!
These are tasty little dark chocolate flavoured snacks, which (thanks to the oats and peanut butter) are quite filling and better for you than cookies!

I used:

1 tablespoon of flax seeds, blended and mixed with 3 tablespoons of water
1/4 cup of coconut oil
1/6 cup of Demerara sugar
1/4 cup of peanut butter
1 teaspoon of bicarbonate of soda
a pinch of sea salt
3 tablespoons of cocoa powder
1.5 cups of oats (I blended them to make them finer but this is down to your preference)
1/2 cup of soy milk
I mixed all this together in that order until it made a dough. If it’s too sticky, add some oat flour, if it’s too dry add more soy milk.


I separated the dough into 18 balls and put them on a greased baking tray. Very slightly flatten them with a fork.


I cooked for 12 minutes on 180 degrees but this will vary depending on your oven so check them regularly. When they’re done they should be chubbier than cookies, crunchy on the outside and soft and cake-like in the middle. So yummy!


If you want to make them naughtier, add dairy free chocolate chips!
