Vegan Peanut Butter Cookies

I’m still getting the knack of baking so the first batch went horribly wrong! I ended up with one big burnt biscuit…

But the second batch were beautiful as well as the perfect amount of chewy and crunchy.

I used:

50g peanut butter

75g Pure vegan spread

50g demerara sugar

50g caster sugar

100g flour

First of all I mixed the peanut butter and spread together and then added both sugars and stirred them in.

Next I added the flour and mixed it all until it was more dough-like.

Separate the dough into balls (I found 18 worked best) and place on a greased baking tray. Flatten the balls slightly with a fork and then cook for approximately 15 minutes. If you want them chewy cook them for less time and more time for crunchy!


The time will also vary slightly depending on your oven. Mine was at 200 degrees but check them regularly to avoid big burnt errors like my first batch!

They taste best when eaten warm, YUM.
